Almond Paste

Hey, this recipe uses a raw egg white, do not eat it uncooked! This recipe comes from King Arthur Flour but I’m resposting it here in case the link is ever broken.

In a bowl combine 1 3/4 cup or 168 grams of blanched almond flour and 1 1/2 cups or 170 g powdered sugar. You can make your own almond flour but I have not made it myself so this is my suggested method. Mix up well, and place in a food processor. Add 1 egg yolk, 1 1/2 tsp almond extract and 1/8 tsp salt. Mix until it forms a ball (you may need to wipe it down a couple times if using a very small food processor) and it’s done. Store in plastic. If you absolutely have to eat it raw, make another recipe. Here’s one.

Almond Paste for baking

Makes about 12 ounces
Servings: 0

Ingredients

  • 168 g blanched almond powder
  • 170 g powdered sugar
  • 1 egg white
  • 1 1/2 tsp almond extract
  • 1/8 tsp salt

Instructions

  • Combine 168 g (1 3/4 cup) blanched almond powder and 170 g (1 1/2 cup) powdered sugar in a bowl. Mix to combine.
  • Put mixture in a food processor with 1 egg yolk, 1 1/2 tsp almond extract, 1/8 tsp salt. Mix until combined and forms a solid ball.
  • Store in plastic wrap.
