If you like Pina Coladas

I received a box of Maui Gold Pineapples as a gift recently. These pineapples arrived ripe and ready to be eaten, so I went to work making as much ice cream and sorbet as possible. I made a pineapple ice cream, a spicy sorbet with jalapeno and citrus, and this dairy free Pina Colada flavor. 

My first attempt was a custard based pineapple ice cream, I found a few recipes online and mashed them together. This came out delicious and smooth, the texture of a Dole whip. However, upon freezing it became crumbly and icy. The flavor is nice but the texture is very wrong. I wonder if it was somehow defrosted and frozen again, or if this is just the result of too much water in the pineapple. Many recipes I looked at called for canned pineapple, which may have less water than fresh. I also used the entire pineapple when many recipes called for about half that volume. May be worth repeating with a few major tweaks.
2/10 after freezing, 9/10 before. Not recommended to freeze, but would be a good dupe for an immediately eaten dole whip.

The second attempt was a simple pineapple sorbet with an added jalapeño and some citrus. This turned out surprisingly good, very spicy but tolerable and enjoyable. The heat doesn’t linger and the sweet pineapple flavor really refreshes. It did have a slightly icy texture, but was (for lack of a better word) very moist and pleasant to eat.
9/10, kept very well and is zingy and refreshing. I could eat this any time of the day, almost reminds me of a spicy ginger shot in terms of heat.

The last try was a non-dairy piña colada sorbet with coconut milk and cream, and a little coconut flavored rum. I do believe I used the wrong brand of coconut cream, and have used more creamy ones in the past. If you have a recommendation, please let me know! But it still came out very well, a little icy but still pleasant and solid enough. Very tropical and bright. It would be best served scooped into a Pina colada drink or with some pineapple juice and more rum if that’s your thing.


7/10, could definitely be creamier and more ice cream, like with some tweaking.
Overall it was so fun to eat this much pineapple in January, and it really brightened the beginning of the new year!
