Pebbles Cereal Ice Cream Bars

This cereal ice cream bar uses Cocoa Pebbles in the ice cream and Fruity Pebbles in the marshmallow treats. You can obviously use other kinds of cereal for either, but I think for the treats themselves, Pebbles or Rice Krispies are the best option. The pieces of cereal are small and delicate and easy to chew even when frozen.

Start by making the ice cream. I ended up making a double batch because I really wanted a big ice cream to treats ratio. I use a custard base with 5 egg yolks, but you could also use my simple ice cream base. Just a matter of preference.

Combine 3 cups or about 150 grams of Cocoa Pebbles with the base of your choice, and agitate to release all the cocoa flavoring. I mixed it then let it sit for about 10 minutes. Pebbles are very delicate and will break down very easily in liquid, so you will end up with a but of a mushy consistency that will end up in the base.

I strained the cereal milk into a bowl but quite a bit of the mushy cereal ended up going through the strainer and into the ice cream base. If you want to prevent this just skip the soaking and strain it sooner. I don’t mind a bit of the cereal in the ice cream but it does make it a thicker consistency.

For the marshmallow cereal treats I used the classic Rice Krispie Treats Recipe. I prepared two 9.5 inch silicone baking pans with a thin coat of butter. Then I melted 3 tbsp of salted butter in a large pan over low, and once it was melted added 10 oz of marshmallows. After stirring until it melted,

I turned off the heat and added 6 cups of Fruity Pebbles. I transferred the marshmallow treats into both silicone pans, half in each, and used a greases sheet of parchment to smooth it out flat.

Then I churned the ice cream and spooned it on top of one of the layers of marshmallow treats. I made a second batch of ice cream and put that on top, and then placed the second layer of marshmallow treats on top. Then it went into the freezer to fully set overnight. If you only have one freezer bowl you may have to wait until the next day to make a second batch. If you make a lot of ice cream I suggest buying a second freezer bowl to always have on hand, or a compressor style machine that is always ready to churn.

After it was set I removed the ice cream treats from the silicone pan and cut into quarters, then each quarter into thirds for that perfect bite.

Pebbles Cereal Ice Cream Sandwiches

Ingredients

  • 150 grams Cocoa Pebbles Cereal (3 cups)
  • 1 batch ice cream base, custard or simple base
  • 300 grams Fruity Pebbles (6 cups)
  • 3 tbsp salted butter
  • 10 oz marshmallows

Instructions

  • Make an ice cream base of choice, I prefer a custard base but it's just a matter of preference. If doubling the ice cream in this recipe like I did, make 2 batches. This will give you a larger ice cream to treats ratio. Most machines will only fit one batch at a time.
  • Measure out 150 grams (3 cups) of Cocoa Pebbles for each batch. Place in a large temperature proof bowl.
  • Pour one batch of heated ice cream base over the Pebbles and mix to release the cocoa flavoring. Let sit for 10 minutes to steep.
  • Strain the cereal out, you may end up with some mushy cereal that goes through the strainer but this will not affect the texture that much.
  • Put the ice cream base into the refrigerator to chill for a few hours.
  • Make the cereal treats. Place 3 tbsp of butter in a large saucepan and melt on low.
  • Once the butter is melted, add 10 oz of marshmallows and stir until completely melted.
  • Turn off the heat and add 6 cups or 300 grams of Fruity Pebbles. Mix to combine and immediately add to a greased or parchment lined and greased shallow baking pan . I used two 9.5 inch silicone pans but you can use one long shallow baking sheet or pan and just cat it in half.
  • Use a greased sheet of parchment paper to smooth it out flat. You want it to be rather thin since you are using two for this sandwich. Too think and it will be too difficult to eat.
  • Let cool, and churn the ice cream.
  • Pipe or spoon the ice cream on top of half of the cereal treats and place the other half on top like a sandwich.
  • Put into the freezer to fully harden overnight, and then cut into squares. Enjoy!
